Asparagus is not like other vegetables. 1 Because it’s more difficult to grow asparagus from seeds, farmers typically buy crowns, 2 dormant roots ready to be planted. They place them in deep trenches, wait several years for them to mature, and then finally cut the plants in the spring, 3 when artichokes are also in season I learned about the entire process one year when I applied for a job on a busy asparagus farm during harvest time. 4 There was asparagus on this farm that was ready to be harvested.
5 The pay wasn’t much but I saw the job as an opportunity to learn about farming and agriculture. The manager explained to me that the crowns had been planted five years ago. During the first year, asparagus can look like a field of weeds. Those weeds have to be cut down so that they don’t sap the nutrients from any developing asparagus roots. The next spring, small sprouts, also known as spears, start appearing but none of them should be picked as the plants are still establishing themselves in the soil. They grow a little bit each year but are cut down because they still aren’t tall enough for harvest. During this phase, 6 it’s difficult to predict how many plants will survive long enough to fully nature.
In the next phase, 7 when the spears are a few inches apart, the asparagus is ready to be harvested. As with all vegetables, some of the plants are ready to be cut before others. This is why one harvest can last up to six weeks. Farmers get up by five in the morning everyday 8 to avoid the midday heat. Spears are cut or snapped just above soil level, leaving benign stubs. The spears are then collected in crates for cleaning and packaging. 9 Five years to wait for one crop to mature seems like a very long time, but once it is established, it can keep on reproducing for up to twenty years. Working on this farm was a great learning experience, but I haven’t been able to eat asparagus since.
